Philly Lentil Salad

INGREDIENTS

INSTRUCTIONS

  1. Wash and drain the boiled lentils
  2. Chop the bell peppers into cubes.
  3. Chop the onion into slices (half ring)
  4. Cut the cherry tomatoes in half.
  5. Wash & drain the mint leaves and the rocket leaves
  6. Mix the olive oil, balsamic vinegar, Philadelphia Cream Cheese, lemon juice and dried herbs all together and season to taste with salt & pepper.
  7. Assemble the salad and toss all the ingredients with the sauce and top the salad with pomegranate seeds and the mint leaves.
  8. Serve.
